DENVER — Insignia International is launching a first-to-market guacamole with added protein under its Yucatan and Cabo Fresh labels.
The products are rolling out to select Kroger, Target, Publix and Albertsons locations with expected distribution to reach nearly 8,000 stores in more than 30 states by year end.
Traditional guacamole contains 1 gram of protein or less per ounce, according to the company. Yucatan Protein Guacamole has 1.7 grams per ounce and 5 grams per 3-ounce cup from a fermentation-derived yeast protein that doesn't alter the creaminess or avocado flavor, according to the company.
"Consumers are looking for protein apart from bars and shakes, but they don't want to give up the foods and flavors they already enjoy," said Shawn Funderburg, senior vice president of guacamole at Insignia International. "Our challenge was to add an adequate amount of protein without creating a gritty texture or changing the avocado flavor. After testing multiple protein sources and refining the formula, we developed a product that gives consumers added functionality in a familiar, convenient format."
